Curious as to know the difference
What is the difference between the Black to Transparent Gradient and the Black to White Gradient--are they not doing the same jobe?

No, black to white fades between black and white, ie. the greyscale spectrum. Bear in mind that it's Foreground to Transparent so this gives a fade out from whatever colour you have as the foreground colour.

If you apply them both to a blank white layer then yes, they'll appear the same. But the foreground-to-transparent mode is especially useful for adding shading to existing layers, or in blank layers: only the black will show up, so it will only darken what's beneath it.

David - can you have a "greyscale spectrum"?

In the non-scientific use, I suppose - as in 'covering the whole business spectrum'
